About the day
One dish, read closely, once a year.
World Beef Bourguignon Day is an annual day of observance for bœuf bourguignon — a single dish taken seriously by kitchens on every continent, on the same day, in as many versions as there are cooks.
The origin
The idea is deliberately small. Pick one dish. Pick one day. Ask the people who cook it, serve it and love it to put it forward, in their own way, and to write their name in a shared record. Everything else — the arguments about cut and wine and hours — takes care of itself.
Bœuf bourguignon earns the attention. It is exact enough to be argued over and generous enough to be shared, a dish built for a table rather than a plate. It rewards time, which is the one ingredient no kitchen can fake. And it belongs to no single country: Burgundy gave it a name, but it has been adopted, adapted and improved wherever there is beef, wine and patience.
The day is free to observe, open to anyone, and owned by no brand. It exists to be joined.
A short history
A dish that was never really peasant food
In Burgundy, beef is braised slowly in the region's own wine — a Sunday dish in a place that never lacked for a bottle. Closer to the cellar than the field.
Escoffier sets it down in Le Guide Culinaire, moving bœuf bourguignon from the home kitchen into the professional canon.
The inns of Burgundy and the bouchons of Lyon make the braise a benchmark of regional French cooking.
Mastering the Art of French Cooking carries the recipe into English-speaking kitchens, and the argument goes global.
It is cooked on every continent, in a hundred dialects of the same dish — and settled nowhere.
The charter
We cook bœuf bourguignon as it was handed down — slowly, with good wine, and without trying to reinvent it. We serve or share it on 13 August, and on that day each year thereafter. And when we speak of the day, we name it fully: World Beef Bourguignon Day, founded by Chef Sébastien Houillon and the founders of Délidoor.
Who is behind the day
Founder & stewardship
World Beef Bourguignon Day was founded in Australia in 2026 by Chef Sébastien Houillon and the founders of Délidoor.
Délidoor cooks bœuf bourguignon at scale in Sydney, and started the day to give the dish a shared occasion rather than a private one. The day is voiced and governed as an independent celebration: the founder sets the charter, and the register belongs to everyone in it.
Governance
The day is free to join and non-commercial. No member pays to be in the register, no version is judged against another, and no one buys their place. What it asks is in the charter: cook it as it was handed down, take part on the day, and name the day fully.
