Every year, the world reads one dish closely.
Bœuf bourguignon is the argument that never ends — the cut, the wine, the hours, whether lardons are negotiable. On the third Thursday of August, kitchens everywhere put it on the pass and settle nothing at all.
The charter
Agreed by every member of the dayWe keep bœuf bourguignon as it was handed down — cooked slowly, with good wine, and without trying to reinvent it. On the third Thursday of August, and on that day each year thereafter, we cook it, serve it, share it, or simply sit down to it. And we pass it on.
